One-Pan Lemon Garlic Chicken and Vegetables

Ingredients:

  • 2 chicken breasts
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup baby potatoes, halved
  • 1 cup broccoli florets
  • 1 cup carrots, sliced

Instructions:

  1. Preheat your oven to 200°C (392°F). Place your steel baking sheet or pan in the oven to warm it up.
  2. In a bowl, mix olive oil, garlic, lemon juice, and zest. Season with salt and pepper.
  3. Using your steel tongs, coat the chicken breasts with the mixture and place them on the preheated pan.
  4. Toss the vegetables in any remaining marinade, then arrange them around the chicken on the baking sheet.
  5. Roast for 20-25 minutes, or until the chicken is fully cooked.
