Mediterranean Chickpea Salad

Ingredients:

  • 1 can of chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley, chopped

Dressing:

  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. In a large steel mixing bowl, combine chickpeas, cucumber, tomatoes, olives, and feta.
  2. Whisk together dressing ingredients in a steel measuring cup, then pour over the salad.
  3. Toss well using steel salad tongs.
  4. Serve on a platter with steel salad forks and spoons for a rustic Mediterranean meal that highlights the fresh ingredients and the beautiful flatware.
